La Carlota was founded in 1767. King Charles III of Spain wanted to colonize some depopulated areas of the Guadalquivir Valley and the Sierra Morena. This large-scale project established three main settlement areas: La Carolina (Jaén), La Carlota (Córdoba), and La Luisiana (Seville). The aim of this colonization was, on the one hand, to protect stagecoach traffic from banditry and, on the other hand, to reestablish profitable farms. About 6,000 German and Flemish Catholic settlers, as well as some Catalans and Valencians, came as new settlers. Germans were recruited by Johann Kaspar Thürriegel. Of these 6,000 colonists, about 1,600 settled in Carlota. For this reason, Central European surnames and ethnic characteristics and traditions are widespread among the inhabitants, such as the tradition of painting Easter eggs, but also popular local dishes such as pork stew and sausages cooked in wine.
